HIGH WIRE

American Kettle sours are a relatively recent addition to the lexicon of beer styles in existence. Conceived in an effort to produce a sour beer quickly, without having to wait months or years for the bugs to naturally work their magic, as well as maintain a relatively clean beer stream throughout cellaring and packaging, and not contaminating an entire brewery with souring organisms, kettle sours achieve both ends while maintaining the craft, creativity, drinkability, and flexibility.

High Wire has a simple malt backbone, and a low hop load allowing its flavour to be dominated by Lactobacillus and Pediococcus lactic acidity, and a blueberry undertone, added during fermentation.
